How To Make Ras el Hanout

Ras El Hanout

Ras el Hanout is a spice mix found in varying forms in Tunisia, Algeria, and Morocco. The name means “head of the shop” in Arabic and implies a mixture of the best spices the seller has to offer. We use this spice mix in making Tagines and other Moroccan dishes.

Ingredients For Ras El Hanout

  • 2 teaspoons ground ginger
  • 2 teaspoons ground cardamon
  • 2 teaspoons ground mace
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground coriander seeds
  • 1 teaspoon ground nutmeg
  • 1 teaspoon turmeric
  • 1 tsp pepper
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground anise seeds
  • 1/4 teaspoon ground cloves

Spice Organization

By the time we had accumulated the spices for Moroccan cooking after everything for Ethiopian, Thai and Indian cuisine we had to do something to organize our spice cupboard. We found Vertical Spice and went from this:

Two Teaspoons

We are just going to combine all the ingredients in a small bowl. We’ll start with 2 teaspoons each of ground ginger, cardamom and mace.

2 tsp Ginger, Cardamom and mace

One Teaspoon

For our one teaspoon group we’ll add the cinnamon, allspice, coriander, nutmeg, turmeric and pepper.

1 tsp cinnamon, allspice, coriander, nutmeg, turmeric and pepper.

One Half Teaspoon

Next we’ll add 1/2 teaspoon of cayenne and anise.

One Quarter Teaspoon

Lastly we’ll add 1/4 teaspoon of ground cloves. Cloves can overpower easily so just a little bit to keep it all in balance.

Mix

We’ll give this a thorough mix and our Ras el Hanout is ready.
