How To Make Your Own Curry Powder

Sometimes a recipe will call for curry powder and it’s a good idea to have some on hand. You can try to recreate it on the fly but it is a mixture of a lot of spices so getting one tablespoon is much easier this way.

This recipe is naturally gluten free.

Toast the Whole Spices

To start with we are going to toast all the whole spices. This is common with curry recipes so it makes sense to do it when making curry powder. You will just put all the whole spices in a dry skillet over medium heat and let them get hot while stirring. They will get very fragrant and it’s okay if it smokes a little but be careful not to burn them.

Spice Cupboard Organization

There are a lot of spices involved with cooking curries and molés and we usually have everything we need in the 2 Cooks Kitchen. Having so many spices became very difficult to manage and our spice cupboard was a mess. We had to really hunt to find that one other spice. Our problem was solved with the help of vertical spice. Now we have a way to keep everything organized alphabetically and finding everything we need for a recipe like this is a breeze.

Grind the Whole Spices

Once our whole spices have cooled we will put them in a spice grinder. We used to use this dedicated coffee grinder for spices but we burned the motor up. Now we have a much better spice grinder that we are very happy with. The newer one has parts that are dishwasher safe, too. That’s a big plus.

Add the Powdered Spices, Chiles and Curry Leaves

Now we just add all the powdered spices, the chiles and the curry leaves to the whole spices. You can use more chiles for a spicier mix. For the leaves you can use bay leaves, kaffir lime leaves or avocado leaves if you can’t find curry leaves. We are not exactly sure what ‘curry leaves’ are as we don’t know of a curry plant. We have also started using garlic granules instead of garlic powder because we have the wet Pacific Northwest climate and garlic powder becomes impossible to use.

Grind Thoroughly

Now we are just going to grind this thoroughly until we have a nice spice powder. We’ll put it in a jar and it will live on one of our Vertical Spice racks.

Description

Here is a spice powder with all the flavors of a curry.


Ingredients

Scale
  • 1/4 C Coriander Seeds
  • 4 tsp Cumin Seeds
  • 1 Tbls Fennel Seeds
  • 1 tsp Black Peppercorns
  • 1 tsp Yellow Mustard Seeds
  • 3 Arbol Chiles
  • 4 Dried Curry Leaves
  • 2 Tbls Turmeric
  • 1 tsp Fenugreek
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Garlic Granules
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon

Instructions

  1. Put the coriander seeds, cumin seeds, fennel seeds, black peppercorns and mustard seeds in a dry frying pan over medium  heat. Sweat the whole spices while stirring until they become fragrant. Let cool.
  2. Put the whole spices into a spice grinder and add all the other ingredients. Grind until it becomes a smooth powder.
  3. Keep in a labeled spice jar.
