Cherry Tomato Caprese Salad

This Caprese Salad is great for the summertime when we have an abundance of cherry tomatoes. Add some mozzarella balls and basil and you have a quick and easy delicious meal.

Ingredients For Cherry Tomato Caprese Salad

  • Cherry Tomatoes
  • Mozzarella balls
  • Basil
  • Salt
  • Pepper
  • Olive Oil

Cherry Tomatoes

We all know that fresh homegrown food tastes the best and we grow tomatoes in our greenhouse every year because they are so good. Next best are the tomatoes you can get at your Farmers Market. Those are usually fresh and delicious. How many tomatoes you need depends on your goal for the salad. You can make a giant meal in a bowl or just a couple small sides. We cut the tomatoes into quarters, or halves if they are really small.

Mozzarella

For this salad we like to use the small mozzarella balls we can find in the grocery store. They are about the size of the cherry tomatoes so they make a salad that eats well. We use half as many as the tomatoes and we cut the mozzarella balls in half.

Combine Tomatoes and Mozzarella

We put our tomato quarters and mozzarella halves into a large serving bowl.

Basil

When the Farmers Markets are in full swing we can get delicious fresh basil. We see so many varieties and any of them work fine for this recipe. Basil is a finicky crop in our climate but we have managed to grow it sometimes.

Cut the Basil

We will use a technique known as chiffonade to thinly slice the basil leaves. You stack the leaves on each other and roll the stack up. Then you take thin slices across the roll.

Add Basil To the Tomatoes and Mozzarella

Now we just mix the basil into our salad.

Add Salt and Pepper

We’ll add a little salt and pepper to our salad.

Olive Oil

Lastly we pour a little olive oil over the salad. You can also add balsamic vinegar or lemon juice if you want but this salad is great with just the fresh taste of the tomatoes and basil.

Garnish and Serve

We eat with our eyes first so we like to serve a pretty dish. We’ll garnish with edible flowers.

Ingredients

Scale
  • 30 Cherry Tomatoes
  • 15 Mozzarella balls
  • 6 large Basil Leaves
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 2 Tbls Olive Oil

Instructions

  1. Cut the cherry tomatoes into quarters
  2. Cut the mozzarella balls into halves
  3. Combine tomatoes and mozzarella in a large serving bowl
  4. Stack the basil leaves, roll them up and cut thin slices across the roll. Add the slices to the salad bowl.
  5. Stir to combine
  6. Add salt, pepper and olive oil. Stir well.
  7. Garnish with edible flowers and serve.
