Insta pots are everywhere these days. The 2 Cooks even broke down and bought one. Like we really needed another appliance! We got the Ninja Foodie which has some great features, one of which is making yogurt. You simply set the amount of time you want your yogurt to ferment, add milk, come back in a few hours and add the yogurt culture and the Foodie does all the rest of it for you.

Yogurt is naturally gluten free.

The Ingredients:

  • `1/2 Gallon Milk
  • 1/2 Cup Yogurt With Live Cultures

The Insta Pot Yogurt Setting

We expect there will be some differences in various brands of Insta Pot but here is how it works with our Ninja Foodie. When you press the Yogurt button you have an opportunity to set the time you want your yogurt to ferment. You can set this to anywhere from 8 hours for runnier yogurt to 12 hours for firmer yogurt. For this recipe we are setting it to 10 hours. You can also set the function to ‘ferm’ for ferment. The instructions that came with our foodie say to set it to ‘ferm’ but you should not! If you do that it will just cook the milk for 10 hours and you end up with goo.

Add the Milk

Next we’ll add the milk. You can use whole milk or low fat milk, it’s up to your preference. We’re using a half gallon of whole milk for this batch but we’ll probably make low fat yogurt most often.

Close the Lid and Press the Start Button

We need to use the pressure cooker lid for making this. We’ll leave the valve set to vent. Once we push the start button the machine will boil the milk and then cool it down. This can take between four and five hours. The display will read ‘boil’ and then ‘cool’.

Add and Stir

Once the milk has cooled back down to 108° the machine will beep and the display will flash ‘Add’ and ‘Stir”. This is the indication that we need to open the lid and stir in 1/2 cup of yogurt that contains live yogurt culture. You will find that not all yogurt in stores contains live culture so you’ll need to read the labels. We’ve seen some that say ‘made with live cultures’ and that is not the same thing. You need to look for some that CONTAINS live yogurt cultures.

Press Start Again

Once we have stirred the yogurt in we’ll replace the lid and press the Start button again. The display will show the clock counting down from our ten hours that we set. When this time is over the machine will turn off. It needs to cool a bit before we put it in the refrigerator so we try to let this ferment overnight and turn off in the morning right before we get up.

Stir and Refrigerate

Now we just open the pot, stir the yogurt and put it in containers to go in the refrigerator. After it has chilled for 8 hours you can add flavorings such as fruit, vanilla or sweetener or you can just use it as is.

We like to eat ours with fruit and granola. We also use it for our Green Goddess Dressing.
