How To Make Tandoori Chicken Wings

We make Tandoori style chicken wings in a conventional oven. This is a great combination of Indian curry spices with a favorite football snack.
This recipe is naturally gluten free.

Ingredients For Tandoori Chicken Wings
- 1 lb Chicken Wings
- 3/4 Cup Yogurt
- 1 Tbls Garlic, ground
- 1 Tbls Ginger, ground
- 1 tsp Garam Masala
- 1 tsp Fenugreek
- 1 Tbls Chile Powder
- 1/2 tsp Turmeric
- 1/2 tsp Salt
- 1 Tbls Lemon Juice
- Chopped Cilantro for garnish
Chicken Wings
We’ll put our chicken wings in a large mixing bowl. You can get wings that are whole or wings that are separated into drumettes, wingettes and sometimes the tips are included. The tips don’t offer much in the way of meat but we like the saucy and crunchy ends. You can use whole wings or separated parts for this recipe.
Make The Sauce
We’ll start our sauce by putting the yogurt, garlic and ginger in a small mixing bowl.
Garam Masala and Fenugreek
Next we’ll add the garam masala and fenugreek. We make our own garam masala and here’s our recipe.
Chile Powder and Turmeric
Then we’ll add the chile powder and turmeric. We’re using regular chile powder but if you want to use something like habañero powder or a hotter chile powder it would work fine.
Salt and Lemon Juice
Our last ingredients are salt and lemon juice.
Mix Well
We’ll mix our sauce together thoroughly.
Marinate The Wings
Now we’ll pour our yogurt sauce over the wings and mix to get them all coated. We’ll cover the bowl and put it in the refrigerator for at least an hour. You can do this the day before and let it marinate overnight.
Preparing The Pan
We’re going to use a large broiling pan with a rack, cover it with foil and spray it with cooking spray. Then we’ll spread our marinated wings out on it.
Cook at 400° For 30 Minutes
We want to simulate a tandoori oven which cooks at a high temperature. We’ll preheat our oven to 400 degrees and cook the wings for 30 minutes. We want the rack in the top third of the oven because we’ll be broiling the wings later.
Broil To Finish
Now we’ll change the oven setting to broil and finish the wings. This could take anywhere from 3 to 5 minutes so keep an eye on it so you don’t burn the sauce.
Plate and Garnish
We’ll put the wings on a late and garnish with some cilantro. These wings don’t really need a dipping sauce but you can serve them with one if you prefer. Blue cheese sauce would be good or a yogurt and spice mix.

Instructions
- Put the chicken wings in a large mixing bowl.
- Put the yogurt, garlic paster and ginger paste in a small mixing bowl. Add all the other ingredients except the cilantro and mix well.
- Pour the yogurt sauce over the chicken and stir well to coat. Cover and refrigerate for at least an hour to overnight.
- Preheat the oven to 400° with the rack in the upper third of the oven. Cover a broiling pan with foil and spray it with cooking spray. Spread the chicken out on the pan and cook for 30 minutes.
- Turn the oven setting to broil and cook for 3 to 5 minutes more to finish the chicken.
- lace the wings on a plate and sprinkle with chopped cilantro.
