How To Make Pineapple Sage Mojitos

Pineapple Sage Mojitos are a refreshing way to incorporate some of the abundance of this aromatic plant. We’ll use the pineapple sage leaves to make pineapple sage simple syrup as well as to muddle in the glass. This recipe will make 2 mojitos but you can always double or triple it for larger parties.
This recipe is naturally gluten free.

Ingredients For Pineapple Sage Mojitos:
- 24 Sage Leaves to make simple syrup for 4 drinks
- 2/3 cup water
- 1/2 cup sugar
Pineapple Sage Mojito:
- 6 to 8 Pineapple Sage leaves
- 1 lime cut into quarters
- Ice
- juice of 1 lime
- 3 ounces simple syrup
- 4 ounces Rum
- top with tonic (or club soda if you prefer)
Make the Pineapple Sage Simple Syrup
We’ll need about 24 pineapple sage leaves and we’ll put them in a small saucepan with 2/3 cup water and 1/2 cup sugar. This quantity is enough for four mojitos. You can multiply it to make more at one time. It will keep in a bottle in the refrigerator. We will bring this to a boil, remove it from the heat and let it steep about 10 minutes. By that time all our sugar should be dissolved and the leaves will have imparted their flavor to the syrup.
Strain the Simple Syrup
Once our syrup is cooked we will pour it through a fine mesh strainer.
Muddle the Sage and Lime
We’ll put 3 or 4 pineapple sage leaves in each pint glass along with 1/4 of a lime cut into three pieces. Next we will muddle this. We have an actual muddler but if you don’t, you can use the end of a wooden spoon and it will work just fine. The object of muddling is to smash everything and release all the juice and flavor into the drink.
Add Ice
Next we fill the glasses about 3/4 of the way up with ice.
Squeeze In Lime Juice
We’ll squeeze the juice of half a lime into each glass.
Add Simple Syrup
Next we measure 1 1/2 ounces of our pineapple sage simple syrup into each glass.
Don’t Forget the Rum!
We like 2 ounces of rum for each drink. You can use more or less depending on your taste. Just a plain white rum works best for Mojitos.
Top With Ice and Tonic
Now we’ll top the glasses off with a little more ice and a little tonic. We use a quality tonic or you can use club soda instead.
Stir
The last step is to stir our mojitos. This is a nice chance to use our bar spoon. It doesn’t see a lot of action.
Garnish
We’ll garnish our pineapple sage mojitos with a sage leaf and edible flowers. Doesn’t that look refreshing? Salud!

Instructions
- Make the Pineapple Sage Simple Syrup. Put the sage leaves in a saucepan with the water and sugar. Bring to a boil, remove from heat and let steep for 10 minutes. Strain off the liquid.
- Put the sage leaves and lime pieces into the bottom of a 2 pint glasses. Muddle well with a muddler or the end of a wooden spoon.
- Fill the glasses 3/4 of the way with ice.
- Squeeze in the lime juice.
- Measure 1 1/2 ounces of the cooled simple syrup into each glass.
- Add 2 ounces rum to each glass.
- Top each glass with ice and tonic or club soda.
- Stir well.
- Garnish with a pineapple sage leaf and an edible flower.
