How To Make Tamarind Simple Syrup

We are making a Tamarind flavored simple syrup to use in a Holé Molé Cocktail. The idea for a molé cocktail came from one of our trips to Puerto Vallarta. We had dinner at a wonderful restaurant called Tintoqué and they served a similar drink.

Tamarind Simple Syrup is naturally gluten free.

Three Ingredients

This is very much like any simple syrup. Take equal parts water and sugar, bring to a boil to dissolve the sugar and then let it cool. There’s a reason it’s called simple. We are just going to add 2 tablespoons of tamarind pulp before we boil it and then strain it when it’s cool. You can find tamarind pulp in blocks at the grocery store and then we freeze it in 2 tablespoons cubes for future use.

Put One Cup Water and One Cup Sugar In A Pan

We’ll begin by adding one cup of water to a small saucepan and then add one cup of sugar and stir well.

Add Tamarind

Next we want to add the tamarind pulp. Tamarind grows as a big seed pod and it can be difficult to extract the pulp from the seeds. In this recipe, you could peel two tamarind seed pods and then just add the whole thing, seeds and all to the water and sugar. We find it much easier to just use the block of pulp with all the work done for us. We freeze the pulp in 2 tablespoon portions so we just defrosted one of those. Add the tamarind pulp to the pan and use a wooden spoon to chop it up some.

Boil 5 Minutes

Bring the pan to a boil and then let it all cook together for about 5 minutes. By then the tamarind pulp should be well distributed throughout the liquid and all the sugar should be dissolved. Pour the syrup into a fine mesh strainer positioned over a bowl. Afterwards, push the syrup through the strainer with a serving spoon or rubber spatula.

Store In Refrigerator

That is it for our tamarind simple syrup. Pour this into a bottle and then refrigerate it. It will keep for a couple weeks. It has a somewhat citrusy fruit flavor and can be added to lots of different things that call for simple syrup.

Ingredients

  • 1 cup Water

  1. Put all the ingredients into a small saucepan and stir well to combine.
  2. Bring to a boil, reduce heat and let simmer for 5 minutes.
  3. Strain the mixture through a fine mesh strainer.
  4. Store in the refrigerator.
