How To Make Miss Kelly’s Elevated Meatloaf

Meatloaf has long been a staple of the dinner table. It can be boring, it can be dry, it’s often smothered in ketchup and met with groans when presented at the dinner table. This recipe is a wonderful version of meatloaf that will have everyone begging for seconds.
This recipe is made gluten free by using gluten free breadcrumbs.

Ingredients For Miss Kelly’s Elevated Meatloaf
- 1 lb Ground Beef
- 1 lb Hot Italian Sausage
- 3/4 Cup Chopped Onion
- 1/2 Cup Chopped Spinach
- 1/3 Cup Gluten Free Bread Crumbs
- 1 Tbls Garlic Granules
- 1 Tbls Dried Parsley
- 1 egg
- Worcestershire Sauce
- One Cup Barbecue Sauce
Put The Meat In A Large Mixing Bowl
You’re going to need some room to mix this so put the meat in a large mixing bowl. The real secret to Miss Kelly’s meatloaf is using both a spicy pork sausage and ground beef. When we add the pork we add some fat and some juiciness. By using spicy pork we really elevate the flavor. We like the hot Italian sausage but you can use the mild if you are cooking for kids or people sensitive to spicy food. This does not come out too spicy for most people or Miss Kelly wouldn’t recommend it!
Add The Diced Onion
We’ll start by adding our chopped onion. We just use a small sweet onion for this but if you want a more crunchy strong onion flavor you could use a yellow or red onion. It will still be great no matter what you choose. The onion has time to cook along with the meat.
Add The Spinach
Next we add the chopped spinach leaves. You could probably use frozen spinach for this but we prefer the fresh leaves. This is a good way to sneak in some greens for those picky eaters. Spinach is not an essential ingredient for this meatloaf so if you find yourself without any you’re not out of luck.
Add The Gluten Free Bread Crumbs
We will add a small amount of gluten free bread crumbs. We’ve used gluten free panko for this but you could also chop up a piece of gluten free bread in a blender. Bread crumbs and croutons are the best uses we’ve found for gluten free bread.
Add Garlic
We’re using garlic granules. We like them because they don’t cake up and turn solid in the jar like garlic powder does. You could also chop up some fresh garlic cloves instead.
Dried Parsley
We can grow parsley in our herb garden and dry our own but dried parsley is pretty easy to find.
Salt And Black Pepper
We’ll add a teaspoon each of salt and black pepper to give it some seasoning.
Worcestershire Sauce
We add in about 5 good shakes of Worcestershire Sauce for that bit of umami flavor.
One Egg
And lastly we need one egg to help hold everything together.
Mix Together
We mix everything together with our hands. We like to wear latex gloves for this job but you certainly wouldn’t have to.
Shape the Loaf
Once our meatloaf is thoroughly mixed we will separate it into two balls of equal size. Then we will cover a baking pan with foil for easier cleanup and shape our loaf on the foil using one of the balls. You can cook both loaves at this time or freeze one of the balls to cook later. We’ve used the second half to make meatballs before and they came out great as well.
Barbecue Sauce
Barbecue sauce is the key to our meatloaf. We use our homemade Rockin’ Sauce and it’s absolutely fantastic! You can just use your favorite barbecue sauce and cover the entire loaf with it.
Bake At 350°
Now we’ll put our meatloaf in a 350° oven for 50 minutes to an hour. We want the middle of our meatloaf to reach 160°. This will give it a nice moist cook without drying it out. Some of the fat from the pork runs out during cooking which is just fine.
Cut The Meatloaf
We’ll move the meatloaf to a cutting board and slice it into thick pieces. It should be nice and moist inside.
Plating
We’ll put a couple slices of our meatloaf on a plate and put on a little more of our barbecue sauce. You can serve this with whatever sides you like. We are fond of mashed potatoes and either corn or peas for an elevated all-American style plate.

- 1/2 cup Chopped Spinach

- 5 Shakes Worcestershire Sauce
- One cup Barbecue Sauce
Instructions
- Put all the ingredients except the barbecue sauce in a large mixing bowl. Using your hands mix it all together thoroughly. Separate into two equal portions.
- Line a large baking pan with foil. Shape one portion of the meat mixture into a loaf in the pan. Do the same with the other portion or you can freeze it for later use.
- Cover the meatloaf with barbecue sauce.
- Bake in a 350° oven for 50 to 60 minutes, until a thermometer inserted into the middle reads 160°.
- Slice the meatloaf into thick slices and put two slices on a plate. Add more barbecue sauce to the slices and serve.
Notes
This recipe makes two meatloaves. You can cook them at the same time or freeze the second one to cook later. You can also use it to make meatballs.
