Best BBQ Beef Ribs With Pineapple Salsa

BBQ Beef Ribs With Pineapple Salsa is the perfect thing to make when we have access to good beef ribs and fresh pineapple. This is one of the things we like to make when on vacation in Hawaii. As soon as we arrive we find the ingredients for a few salsas, pineapple salsa being one of them. This is so good with fresh pineapple but it can be done with canned in a pinch. We have provided the recipe for the pineapple salsa so once you’ve made that you are ready to make the ribs.

Salt the Ribs

This recipe will work with any size rack of beef ribs. We like to buy a whole rack, cut it in half and have this dish twice. It is plenty for two people but if you are feeding more you will want more ribs. Place your ribs bone side up in a baking dish or on a plate. We’ll be barbecuing this so it doesn’t matter what we season it on. You could even just do it on a cutting board. The first thing we want to do is sprinkle the bone side with salt and pepper. If you have Maldon Flake Salt that’s the best but use what you have.

Coat With Barbecue Sauce

Next we want to coat this side of the ribs with barbecue sauce. At home we use our own Rockin’ Sauce but when traveling we use whatever sauce we can find. For this video there just happened to be some BBQ sauce in the refrigerator of the place we rented!

Spoon On the Pineapple Salsa

Now we will spoon on our pineapple salsa. You will want to spread it around and then press it into the meat with the back of a spoon to try to get it to stick to the meat.

Repeat On the Other Side Of the Ribs

Next we will turn the rack over and do the same thing to the other side, starting with the salt and pepper.

Then we slather on the barbecue sauce.

Marinate the Ribs For Several Hours

And finally we put on the pineapple salsa. Once this is all done we will put the meat into the refrigerator and let it marinate for several hours. We like to get it all ready in the morning and let it marinate in the refrigerator until dinner time.

Bring the Meat to Room Temperature For 30 Minutes

Take the meat out of the refrigerator about 1/2 hour before you want to start cooking it. With cooking time included it works out to about 100 minutes before you want to serve dinner. Start the barbecue and adjust it so the temperature is just above 200 degrees Fahrenheit.

Cook Bone Side Down At 200°

When you have the temperature right, put the meat on the grill bone side down. We will close the lid and monitor the temperature to make sure we are cooking this low and slow. This is the perfect time to make a margarita and enjoy the view!

Check After 30 Minutes

After 30 minutes the ribs should look a little cooked, but not too cooked. It will have lost that fresh meat look but not have any char on the outside. Close the lid back up, monitor the temperature and cook for another 20 minutes.

Turn Over After 50 Minutes

Now we want to turn the ribs over and cook them for 10 more minutes. We like to turn the heat up at this stage to get it to about 250 degrees. This will make somewhat of a mess with all that pineapple going into the barbecue but we think it’s worth it.

Cook 10 Minutes More

After 10 more minutes of cooking, remove the ribs from the heat to a cutting board. They should look nice and done by now.

Cover and Let Rest for 10 Minutes

We will cover the ribs with foil and let them rest for 10 minutes. This step is important and you don’t want to skip this.

Cut the Ribs Apart and Serve

Cut the ribs apart with a sharp knife and they will be ready to serve. To cut the ribs apart we start at the small end of the bone and cut down between the ribs. When you get to the bottom of the bone you have to twist the knife to get through the last bit.

BBQ Beef Ribs With Pineapple Salsa

This is a great way to make ribs with fresh pineapple salsa providing a sweet acidity to complement the barbecue sauce.

  1. Put the ribs bone side up and sprinkle salt and pepper over the whole side.
  2. Spread barbecue sauce over the bone side of the ribs.
  3. Spread pineapple salsa over the whole side. Press it down with a spoon to help it stick.
  4. Turn the ribs over and repeat with the salt, pepper, barbecue sauce and pineapple salsa.
  5. Put the ribs in the refrigerator to marinate for at least two hours.
  6. Remove the ribs from the refrigerator 30 minutes before starting to cook them.
  7. Bring the barbecue up to slightly more than 200 degrees and less than 250.
  8. Put the ribs on the barbecue bone side down, close the lid and cook for 50 minutes. Monitor the temperature to keep it close to 200 degrees.
  9. Turn the ribs over, raise the heat to 250 and cook for 10 more minutes.
  10. Tent with foil and let rest for 10 minutes.
  11. Slice the ribs apart and serve.
