How To Make Crispy Cauliflower Crust Pizza

You can still have pizza while avoiding gluten and carbs. This cauliflower crust will work with whatever toppings you want on your pizza. We like to make this with pesto for a sauce and then put on whatever we have around for toppings. Some of our favorites include roasted garlic, carmelized onions, sausage, various cheeses and even strawberries.

This recipe is naturally gluten free and vegetarian.

Prepare the Cauliflower

We’ll start by cutting our cauliflower into florets so we can put it into the food processor. You don’t need to cut it too small but you do want it to fit.

Next we will put the cauliflower into the food processor and pulse it until it is all uniform small pieces. You really want it all chopped up nicely.

Steam the Cauliflower

Then we’ll put the cauliflower pieces into a steamer basket positioned over about 1/2 inch water and steam it covered for about 10 minutes to cook it.

Once the cauliflower has steamed we want to spread it out on paper towels to cool. The paper towels will absorb some moisture at the same time. You can also use a clean tea towel to be more eco-friendly.

We’ll pack the cauliflower down and bring the paper towels over the top and squeeze out some of the water and let the cauliflower rest and cool.

Mix the Ingredients

Once our cauliflower has cooled we will mix up the crust. In a mixing bowl we will mix 1 egg, 1/2 cup of grated Parmesan cheese, 1/4 cup of chopped parsley (optional), 2 tablespoons of minced garlic and some salt and pepper.

When that is all mixed together we will add the cauliflower and get that mixed together.

Shape the Crust

Next we will shape our crust on a piece of parchment paper on a baking sheet. It is much easier to do this right on the baking sheet than to try to move it later. You want this to have a little thickness so it holds together. You can do small, individual sizes or a large one to cut into portions.

Bake the Crust

Now it goes into the oven to pre-bake the crust. We preheat the oven to 450 degrees.

We’ll cook the crust for 15 to 20 minutes until it darkens and takes on a golden color. It should get a little crispy. Don’t hesitate to cook it a bit more if you feel like it’s not done enough.

Put On Sauce and Cheese

Now you can put on whatever sauce you want to use. We like to use our homemade pesto for this but you can use a tomato sauce instead. We’ve even used molé for a pizza sauce before and it comes out fantastic.

We like a good layer of cheese on top of our sauce. We like to use mozzarella because it melts so nicely, and we’ll sometimes combine that with some jack or cheddar for more flavor.

Your Choice Of Toppings

Then we’ll go on with whatever toppings we have around. The possibilities are endless here. You can go traditional and put on some pepperoni or go wild and dream up various combinations. We use roasted garlic, caramelized onions, cooked pork sausage, sauteed mushrooms and even strawberries!

Bake the Pizza

We’ll put our pizza back in the 450 degree oven for 10 to 15 minutes until it is bubbling and golden. We’ll let it cool for about 2 minutes, cut and serve.

Ingredients

  • 1/2 head cauliflower, coarsely chopped
  • 1/2 cup shredded Italian cheese (like parm)
  • 1/4 cup chopped fresh parsley (can be optional)
  • 1 egg, lightly stirred
  • 2 Tbls chopped garlic (more is better)
  • 1/4 tsp each salt and pepper
  • For the pizza-your choice of sauce, cheese and toppings. Just look around and see what you’ve got!

Instructions

  1. Put the cauliflower florets into the food processor and pulse until it is uniformly chopped into small pieces.
  2. Put the cauliflower pieces in a steamer basket over water and steam for 10 minutes.
  3. Wrap the steamed cauliflower in paper towels and squeeze out some of the moisture. Let cool.
  4. In a mixing bowl combine the egg, Italian cheese, parsley, garlic, salt and pepper.
  5. Add the cauliflower and stir to combine well.
  6. Put parchment paper over a baking sheet. Spread the cauliflower mixture on the parchment paper and shape into a pizza shape, roughly 1/4 inch thick.
  7. Bake the dough in a 450 degree oven for 15 to 20 minutes until it is golden.
  8. Top with sauce, cheese and any other toppings.
  9. Bake in the 450 degree oven for 10 to 15 minutes more until golden and bubbling.
  10. Let cool for 2 minutes and then cut and serve.

Notes

Sauce suggestions can be marinara, pesto, alfredo even Mole!
