How To Make A Chupacabra Cocktail

The Chupacabra Cocktail is a delicious adult beverage using Tequila and Watermelon Juice. Infusing the tequila with a little bit of hot pepper gives this drink a nice kick. You can make watermelon juice when they are in season and freeze it for later use. It’s nice to have something sunny in the middle of winter. Chupacabras can be served up or poured over ice.

Chupacabra is naturally gluten free.

The Ingredients For A Chupacabra Cocktail

For the hot chile infused tequila:

  • 1 quart of blanco tequila
  • 1 habañero or serrano

For the Chupacabra

  • 2 oz hot chile infused tequila
  • 3 oz Watermelon Juice
  • 1 oz Lime Juice
  • 1 oz Canton Ginger

Infuse the Tequila

To start we need to infuse our tequila with some hot peppers. You’ll want to use a blanco for this and it doesn’t have to be anything special. We like the Costco blanco for this purpose as it’s fairly good tequila but not too expensive. Pour some tequila into a jar and then add some chiles.

The Chiles

The variables here are how much chile and how long to infuse it. You’ll need to figure out where on the hot spectrum your tastes lie. Our favorite is one habañero for about 24 hours. 2 Serranos for about 24 hours works as well. Then it is just right for us.

Infuse the Tequila

Juice the Watermelon

Now we move on to making watermelon juice. We do this with an immersion blender right in the watermelon. You can also just cut the melon into cubes and put them in a blender but that’s a lot more work. Start by cutting a hole in the top of the watermelon that is a little larger than your immersion blender.

Use the Immersion Blender

Now we will just blend away. We move the immersion blender around inside the melon to get it all pulverized. The more thoroughly you do this step then the less watermelon goes to waste.

Strain the Juice

Once we have a melon full of juice we’ll want to push it through a fine mesh strainer to get some of the pulp out. Pulp may seem like a desirable thing but it makes the drink too heavy so we want to remove it.

Add the Ingredients to the Shaker

Now we have all our ingredients to make our Chupacabra. We’ll put some ice in a shaker and then add 3 ounces of watermelon juice, 2 ounces of spicy infused tequila, 1 ounce of lime juice and 1 ounce of Canton Ginger Liqueur. Domaine de Canton Ginger can be found at most liquor stores.

Shake Well

You’ll want to shake this very well since the watermelon juice is a bit heavy and it takes some effort to mix it. Remember to always smile when you shake a drink. You are making magic!

Strain Into Glass

Once we have shaken our concoction we will strain it off into a large martini glass or a margarita glass. You can also just pour it in a regular cocktail glass, ice and all for on-the-rocks service.

Garnish

Garnish with a watermelon wedge and a thin slice of lime and then enjoy this delightfully summery cocktail.

Description

Here is a spicy, summery cocktail with chile infused tequila and watermelon juice.


Ingredients

Units Scale

For the hot chile infused tequila:

  • 1 quart of blanco tequila
  • 1 habañero or serrano

For the Chupacabra

  • 2 oz hot chile infused tequila
  • 3 oz Watermelon Juice
  • 1 oz Lime Juice
  • 1 oz Canton Ginger

Instructions

  1. Infuse the tequila in advance. Pour some blanco tequila into a quart jar. Cut one Habañero into strips and put it in the jar. Taste after 4 hours to see if it’s hot enough. You can let this sit for up to 24 hours to get it hot enough for your taste.
  2. Make Watermelon Juice. Cut a hole in the top of the watermelon and use an immersion blender to juice it. Alternatively you can cut the watermelon into chunks and put them in a blender to juice them. Strain the resultant juice.
  3. Put several ice cubes in a shaker. Add all four ingredients and shake thoroughly.
  4. Strain the drink into a large martini glass.
  5. Garnish with watermelon wedge and a thin slice of lime.

Notes

It’s fun to make this cocktail for friends and see the surprise on their face as it goes from sweet to spicy.
