How To Make Bone Marrow Butter
Bone Marrow Butter is a sensational ingredient that can elevate your plate and it is easy to make. Once an obscure ingredient only found in the finest of fine dining establishments it is finding a place at the tables of family households. A side benefit of making this recipe is that after you are done you have the bones for making beef bone broth.

Bone marrow tastes very buttery and creamy because of its high fat content. It has a mild umami flavor that is sweet and savory.

About the Bones
We’ll start with our bones. A Marrow Bone is the culinary and butchery term for either the Femur, Shank or Tibia bone of a steer that is cut for eating. As the Femur is the largest bone in the animal, it has the best Marrow to Bone ratio. As the Femur Bone is straight, this allows for easy and uniform cuts for Butchers and easy cooking for the precious Marrow.
Here we are using 10 pounds of bones that have been crosscut. We want to get the marrow cooked properly and be able to get it out of the bones. In restaurants you will often see bones that have been cut lengthwise making a sort of canoe shape for the marrow to ride in. If you have this type of bone you just need to make sure it is cooked. It is very easy to get out.
We will line a baking sheet with low sides with parchment paper. As the marrow melts some of it will run out of the bones and we want to be able to capture that easily. The parchment paper helps us with that job.
Bake the Bones
We will put our bones in a 450 degree oven for 20 minutes. This should be enough time for the marrow to cook through and softened enough to come out of the bones easily. Once it’s done your bones will look and smell great.
After it has cooked we use a small spoon to work the marrow out of the bones and a flat spatula to scrape it up off the parchment paper. This part is easier done after it has cooled a bit.
Whip the Marrow
We’ll put the marrow in a mixing bowl, add a little salt and pepper and whip it up with a hand mixer. We want to mix it all together, make it smooth and whip some air into it so it becomes lighter.
Now we have a whipped bone marrow butter that can be used as is or used as the base to mix with other things such as thyme leaves or cows butter. Then we put it in a jar and keep it in the refrigerator until we want to use it.
After making this recipe you can save the bones and use them to make Beef Bone Broth.
