Ingredients For Tarragon Cream Sauce
- 3 Tablespoons Butter
- 2 Garlic Cloves, chopped
- 1/4 Cup White Wine
- 1 Cup Heavy Cream
- Juice of 1 Lemon
- 1 Bunch of Tarragon, chopped
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Pepper
Saute the Garlic
We’ll start this recipe by melting the butter in a small saucepan. We’ll add the garlic and let it cook for about 5 minutes. We don’t really want the garlic to brown so we’ll keep the heat very low for this part.
Add Wine and Cream
Next we’ll add the wine and cream. We’ll turn the heat up until it starts to bubble and then turn it back down and let it slowly simmer for about ten minutes. We want this to reduce and thicken somewhat. For the rest of this recipe we want the heat low and we’ll stir frequently.
Lemon Juice
Once our sauce has reduced sufficiently we’ll squeeze in the juice of a lemon and give it a good stir.
Add the Tarragon
Now we will add the tarragon and stir that in.
Salt and Pepper
Next we’ll season with a little salt and pepper.
Cook Another Couple Minutes
We’ll just let this cook a couple more minutes while we start plating whatever we’re putting this sauce on. A favorite of ours is putting it on crab cakes. Any leftover sauce is delicious on an omelet the next morning.
