Pesto Vinaigrette

This pesto vinaigrette is a great salad dressing and it is also good on Caprese Salads, and many other things. It is fruity and sweet from the lemon pesto and balsamic with a savory umami backdrop from the basil pesto and fish sauce. We like this on tomato slices with just a bit of salt.

Materials

  • 1 1/2 Tbls Basil Pesto
  • 1 Tbls Lemon Pesto Google for recipe - delicious!
  • 1 1/2 Tbls Balsamic Vinegar
  • 1 Tbls Fish Sauce
  • 1 Tbls Maple Syrup
  • 1 Tbls Orange Juice
  • 1/4 Cup Peanut Oil

  • Add all the ingredients into a half-pint jar. Shake thoroughly to mix.
