Pesto

Pesto is a versatile and tasty Italian paste traditionally made of basil, pine nuts, garlic, salt and hard cheese all blended with olive oil. It is not at all difficult to make and you can modify this recipe to make your own variations.

Materials

  • 1 Bunch Basil Leaves
  • 1/3 Cup Pine Nuts Sub any nuts
  • 8 Garlic Cloves
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 Cup Olive Oil
  • 1/2 Cup Grated Parmesan Cheese

Instructions

  • Fill the bowl of the food processor with basil leaves. Add the pine nuts and pulse a few times.
  • Add the garlic, salt and pepper and pulse until smooth. Scrape down the sides of the bowl as you go so you get everything incorporated.
  • With the food processor running, slowly add the oil.
  • Add the cheese and pulse to incorporate it.
  • Store pesto in the refrigerator or in the freezer.
