Mexican Rice

Mexican Rice is the perfect side dish with any Mexican main dish. There are a lot of variations possible with this dish and this recipe is a great starting point.

Materials

  • 1 Cup Long Grain Rice
  • 3 Tbls Oil
  • 4 Cloves Garlic peeled and minced
  • 1/2 tsp Salt
  • 3 Tbls Chopped Cilantro
  • 1/2 tsp Cumin
  • 1/2 Cup Tomato Sauce
  • 14 Oz Chicken Broth

Instructions

  • Heat the oil in a saucepan over medium heat.
  • Add the rice and stir to coat evenly. Sauté the rice for 5 minutes, stirring frequently.
  • Add the garlic, salt and cumin. Stir and cook for 5 minutes more, stirring frequently so it cooks evenly.
  • Add the chicken broth and tomato sauce. Stir well, bring to a boil, reduce heat, cover and let simmer for 15-25 minutes until all the liquid is absorbed. Then remove from heat for about 10 minutes covered.
  • Add the cilantro and stir it in.
  • Serve with main dish or sauce of your choice.

Notes

You can add things along with the cilantro such as roasted chiles, Roasted Corn, sauteed onions, pineapple pieces, etc.
