Fig And Tomato Salad With Goat Cheese

Fig Tomato Salad is a delicious summer recipe to make. When both figs and tomatoes are ripe this is a creative way to use some of that bounty.

Materials

The Salad:

  • 1 lb Cherry Tomatoes
  • 4 Ripe Figs
  • 4 oz Goat Cheese
  • 4 Sprigs Fresh Thyme

The Dressing:

  • 1/4 Cup Olive Oil
  • 1 tsp Honey
  • 1 tsp Lemon Juice
  • 2 Tbls Balsamic Vinegar
  • 1/2 tsp Salt

Instructions

  • Cut the tomatoes. For larger cherry tomatoes cut them into quarters. Cut the smaller ones in half. Place the cut tomatoes in your salad bowls.
  • Cut the figs into eighths and scatter them over the tomatoes.
  • Crumble the goat cheese evenly over the figs and tomatoes.
  • Make the dressing. In a small bowl combine the oil, honey, lemon juice, balsamic and salt. Mix vigorously until well combined.
  • Pour the dressing over the salads. Remove the thyme leaves from the stems and scatter them over the salads. Serve right away.

You can use any type of goat cheese for this or you can substitute blue cheese for a similar effect.
