- 1/4 C Coriander Seeds
- 4 tsp Cumin Seeds
- 1 Tbls Fennel Seeds
- 1 tsp Black Peppercorns
- 1 tsp Yellow Mustard Seeds
- 3 Arbol Chiles
- 4 Dried Curry Leaves
- 2 Tbls Turmeric
- 1 tsp Fenugreek
- 1/2 tsp Ground Ginger
- 1/2 tsp Garlic Granules
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
Put the coriander seeds, cumin seeds, fennel seeds, black peppercorns and mustard seeds in a dry frying pan over medium heat. Sweat the whole spices while stirring until they become fragrant. Let cool.
Put the whole spices into a spice grinder and add all the other ingredients. Grind until it becomes a smooth powder.
Keep in a labeled spice jar.
