Materials

  • 1/4 C Coriander Seeds
  • 4 tsp Cumin Seeds
  • 1 Tbls Fennel Seeds
  • 1 tsp Black Peppercorns
  • 1 tsp Yellow Mustard Seeds
  • 3 Arbol Chiles
  • 4 Dried Curry Leaves
  • 2 Tbls Turmeric
  • 1 tsp Fenugreek
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Garlic Granules
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon

Instructions

  • Put the coriander seeds, cumin seeds, fennel seeds, black peppercorns and mustard seeds in a dry frying pan over medium  heat. Sweat the whole spices while stirring until they become fragrant. Let cool.
  • Put the whole spices into a spice grinder and add all the other ingredients. Grind until it becomes a smooth powder.
  • Keep in a labeled spice jar.
