How To Make Molé Moco (Mexican Loco Moco)

We recently made Loco Moco, the Hawaiian dish of rice, hamburger patty, gravy and a fried egg. That got us thinking about a Mexican Loco Moco version of the dish with Mexican flavors that we are calling Molé Moco. We used our Mexican Rice recipe, added cornmeal, salsa, cilantro and cheese to the burger and used our Easy Molé Rojo recipe for the gravy. This came out fantastic so we wanted to share it with you all.

Plan Ahead

This recipe requires that you have already made the Mexican Rice and Easy Molé Rojo (or any of our molé recipes).

Prepare the Hamburger

While our rice is cooking and our molé is heating we want to make our Mexican hamburger patties. With one pound of hamburger you can make three or four patties with this recipe. To start, we’ll put the ground beef in a mixing bowl with the cornmeal.

Then we’ll add the salsa and cheese. You can make a Pico de Gallo for this or use a store bought salsa. If it has a lot of liquid you need to strain it first so it’s not too juicy. You want the cheese to be grated fairly finely to help the ground beef stick together well.

Next we will add the egg, spices and chopped cilantro. The egg also acts as a binder to help the ground beef stick together when it cooks.

Now we’ll mix this all together thoroughly. Mrs Cook likes to wear gloves for this kind of job but Mr Cook is happy just digging in with bare hands. You can do what you are comfortable with.

Once we have our Mexican hamburger meat all mixed we need to form it into patties. We like to do this on a sheet of waxed paper as the meat slides well enough to be easy to form into shape and comes off easily when it’s time to go into the pan.

Next we want to get some oil hot in a skillet and put the patties into the pan. We use a combination of olive oil with a little bit of Chile Oil to give it some kick.

We want to cook these thoroughly so that they get crispy on the outside and cook all the way through.

Cook the Eggs

Once the Mexican hamburger patties are cooked it’s time for us to fry the eggs. We want to heat some butter in a small skillet and pour in the eggs. We are making sunny side up eggs and we really want the yolks to be runny for this dish so don’t overcook them. You can use a lid to help get the whites cooked on top if you want.

Assemble the Molé Moco Plate

While the eggs are cooking we can start plating. We’ll put a pile of rice down first and then add the Mexican hamburger patty on top.

Next we will pour our molé over the top of that. The Hawaiian Loco Moco has brown gravy so we are using a Mexican sauce instead. It doesn’t really have to be molé, although this is really good. Other possibilities would include Colorado Sauce, Enchilada Sauce, etc. We have a whole page of Mexican sauces you can play with.

We will top this with our sunny side up egg and add a garnish of green onion pieces. Serve immediately.

For the hamburger:

  • 1 lb Ground Beef
  • 1/4 cup Cornmeal
  • 1/2 cup Salsa
  • 1/4 cup Grated Cheddar Cheese
  • 1 Egg
  • 1/4 cup Chopped Cilantro
  • 2 Garlic Cloves, minced
  • 1/2 tsp Salt
  • 1/4 tsp Oregano
  • Pinch of Black Pepper

To plate:

  • 1 Sunny Side Up Egg
  • Sliced Green Onion for Garnish

Instructions

  1. Make the rice and start the molé heating.
  2. Put the ground beef in a mixing bowl and add the cornmeal, salsa, cheese,cilantro, garlic, salt, oregano and black pepper. Mix thoroughly.
  3. Divide the mixture and shape into patties.
  4. Heat some oil in a skillet and cook the patties until crispy on both sides and cooked all the way through. About 10 minutes on each side.
  5. Heat some butter in a skillet and add the eggs. Cover and cook until the whites are just done and the yolks are still runny, 3 to 5 minutes.
  6. Plate the rice on the bottom, place a hamburger patty on top, cover liberally with the molé and top with the sunny side up egg. Garnish with green onion pieces.
