Ingredients For Fig and Tomato Salad With Goat Cheese:
The Salad:
- 1 lb Cherry Tomatoes
- 4 Ripe Figs
- 4 oz Goat Cheese
- 4 Sprigs Fresh Thyme
The Dressing:
- 1/4 Cup Olive Oil
- 1 tsp Honey
- 1 tsp Lemon Juice
- 2 Tbls Balsamic Vinegar
- 1/2 tsp Salt
Cherry Tomatoes
We begin by cutting our cherry tomatoes. We have some larger ones so we’ll cut those into quarters and the smaller ones into halves. We’ll just put them right into our salad bowls.
Figs
Next we’ll cut the figs. First we’ll cut the tips off, slice them into quarters and then into eighths. Then we’ll put the fig pieces into our salad bowls. We are making two large, dinner size salads but you could make 4 or even 6 smaller salads with this recipe.
Goat Cheese
Next we crumble our goat cheese onto the salads. We like 4 ounces of Cypress Grove Humboldt Fog for this. The tanginess of the cheese complements the sweetness of our figs perfectly. If you are not all that fond of strong goat cheese you can use a creamier chevre or even something like blue cheese. The Cypress Grove cheese is made just two blocks from our home in Arcata, CA.
Make The Dressing
Now that we have our salads ready we can make our dressing. We’ll start by putting the olive oil into a small mixing bowl.
Honey and Lemon Juice
To the oil we will add the honey and lemon juice. We are using a local honey and squeezing a fresh lemon. This gives us some sweet, some sour and some acid.
Balsamic and Salt
Next we’ll add the balsamic vinegar and salt which adds more sweet, acid and of course salt.
Mix Vigorously
Now we mix the dressing. In order to get the balsamic and oil to mix together you have to mix it fairly vigorously. We do this with a whisk.
Dress The Salad
As soon as the dressing is thoroughly mixed we’ll pour it over our salads.
Thyme Leaves
Next we’ll take the thyme leaves off the stem and garnish our salads with them. Thyme grows very well in our garden and we always have a fresh supply and often with thyme flowers. Now our salads are ready to serve.
