BBQ Beef Ribs With Pineapple Salsa

Description

This is a great way to make ribs with fresh pineapple salsa providing a sweet acidity to complement the barbecue sauce.

Instructions

  1. Put the ribs bone side up and sprinkle salt and pepper over the whole side.
  2. Spread barbecue sauce over the bone side of the ribs.
  3. Spread pineapple salsa over the whole side. Press it down with a spoon to help it stick.
  4. Turn the ribs over and repeat with the salt, pepper, barbecue sauce and pineapple salsa.
  5. Put the ribs in the refrigerator to marinate for at least two hours.
  6. Remove the ribs from the refrigerator 30 minutes before starting to cook them.
  7. Bring the barbecue up to slightly more than 200 degrees and less than 250.
  8. Put the ribs on the barbecue bone side down, close the lid and cook for 50 minutes. Monitor the temperature to keep it close to 200 degrees.
  9. Turn the ribs over, raise the heat to 250 and cook for 10 more minutes.
  10. Tent with foil and let rest for 10 minutes.
  11. Slice the ribs apart and serve.
