Description
This is a great way to make ribs with fresh pineapple salsa providing a sweet acidity to complement the barbecue sauce.
Instructions
- Put the ribs bone side up and sprinkle salt and pepper over the whole side.
- Spread barbecue sauce over the bone side of the ribs.
- Spread pineapple salsa over the whole side. Press it down with a spoon to help it stick.
- Turn the ribs over and repeat with the salt, pepper, barbecue sauce and pineapple salsa.
- Put the ribs in the refrigerator to marinate for at least two hours.
- Remove the ribs from the refrigerator 30 minutes before starting to cook them.
- Bring the barbecue up to slightly more than 200 degrees and less than 250.
- Put the ribs on the barbecue bone side down, close the lid and cook for 50 minutes. Monitor the temperature to keep it close to 200 degrees.
- Turn the ribs over, raise the heat to 250 and cook for 10 more minutes.
- Tent with foil and let rest for 10 minutes.
- Slice the ribs apart and serve.
