Slow Cooked Beef Ribs

Ingredients for Slow Cooked Beef Ribs
- 1 Tbls Garlic Granules
- 1 Tbls Onion Powder
- 1 Tbls Cajun Seasoning
- 2 Tbls Brown Sugar
- 1 tsp Chile Powder
- 1 tsp Salt
- 1 tsp Paprika
- 2 tsp Oregano
- 3 lbs Beef Ribs
- 4 Tbls Oil
- 1/2 Cup Barbecue Sauce
Make the Rub
You might be a bit hesitant when you see the word ‘rub’ but there is nothing mystifying about it. A rub is nothing more complicated than a mixture of spices that you rub on the meat before cooking. We’ll use a little oil to help it stick to the ribs. You can vary the spices to your liking as well as to the recipe. For this one we are going with a cajun based rub. You can also make a rub with more curry spices. They can be sweeter or more savory. We are looking for a balance here with a little sugar but not too much.
Garlic Granules, Onion Powder, Cajun Seasoning and Sugar
We’ll begin by putting garlic granules in a smallish bowl. We use the granules because they don’t turn into a solid clump in the jar. We’ll add onion powder and cajun seasoning next. We use an Emeril seasoning (named after the famous chef) that we make in house. We are using one tablespoon of each of these and then adding 2 tablespoons of brown sugar.
Chile Powder, Salt, Paprika, Oregano
Next we’ll add one teaspoon each of chile powder, salt, paprika and oregano. You can adjust the heat by using more chile powder or using a hotter one. We have a jar of Habañero powder we brought home from New Mexico that really has some fire. We have to be careful when using it because it can be too hot for Kelly!
Mix the Rub Thoroughly
We’ll mix this well to get everything combined evenly before we put it on our meat. You may have brown sugar lumps that need to be broken up.
Oil the Ribs
We are using ribs that have already been cut off the bone. It’s so much easier than cutting them up after they have been cooked, and we can get the rub on all sides of each rib. You can do this with a whole rack if you want. We’ll put olive oil on the ribs to help the rub stick better.
Rub the Ribs
Next we will rub the ribs all over with our spice mix. You’ll want to really rub the spices into the meat. With the oil on there the spices should stick just fine. This is a messy job but you’ll find it’s worth the effort.
Lay the Ribs Into An Oiled Pan
As we finish rubbing the ribs we will lay them into an oiled baking pan. You’ll just repeat the process for each rib until they are all done. We are going to cover and refrigerate this and let the ribs marinate in the rub for at least 2 hours. They can even sit overnight if you want to do this part ahead.
Cover the Pan With Foil
After our ribs have marinated we will cover the pan tightly with foil. You want to get as much of a seal as you can so the steam stays in with the ribs. This helps keep them juicy and tender.
Bake 4 Hours at 250°
Now we’ll put the ribs on the center rack in a 250° oven. We’ll bake these for four hours with the foil on.
Slather With Barbecue Sauce
We’ll take the ribs out, remove the foil and slather them with barbecue sauce. You’ll want to turn them meat side up at this point to get the sauce on all the meat. We use our Rockin’ Sauce homemade barbecue sauce but you can use any sauce you prefer.
Broil For 7 To 10 Minutes
Now we want to move the oven rack up, turn the broiler on high and broil our ribs for 7 to 10 minutes. We really want to get the sauce bubbling all over and cooked well, but not burned. You can check them after 5 minutes to see how they are progressing but they’ll probably need a little more time.
Ready To Serve
Once they’ve broiled long enough our ribs are ready to serve. Plate them with whatever sides you want and have plenty of napkins available.

- 4 Tbls Oil
- 1/2 cup Barbecue Sauce
Instructions
- Make the rub. In a small bowl combine the garlic granules, onion powder, cajun seasoning, brown sugar, chile powder, salt, paprika and oregano. Mix well.
- Coat the ribs all over with oil.
- Rub the spice mix all over the ribs. Put them in an oiled baking pan, cover and refrigerate for at least 2 hours.
- Preheat the oven to 250°. Cover the pan tightly with foil to keep the steam in. Bake for four hours with the foil on. Remove the pan from the oven and remove the foil.
- Turn the broiler on high and move the oven rack up to the broiling position. Place the ribs meat side up in the pan and slather with barbecue sauce. Broil for 7 to 10 minutes until the sauce is well cooked but not burned.
- Serve right away.
