Description
We recently made Loco Moco, the Hawaiian dish of rice, hamburger patty, gravy and a fried egg. That got us thinking about a version of the dish with Mexican flavors. We used our Mexican Rice recipe, added cornmeal, salsa, cilantro and cheese to the burger and used our Easy Molé Rojo recipe for the gravy. This came out fantastic so we wanted to share it with you all.

For the hamburger:
- 1 lb Ground Beef
- 1/4 cup Cornmeal
- 1/2 cup Salsa
- 1/4 cup Grated Cheddar Cheese
- 1 Egg
- 1/4 cup Chopped Cilantro
- 2 Garlic Cloves, minced
- 1/2 tsp Salt
- 1/4 tsp Oregano
- Pinch of Black Pepper
To plate:
- 1 Sunny Side Up Egg
- Sliced Green Onion for Garnish
Instructions
- Make the rice and start the molé heating.
- Put the ground beef in a mixing bowl and add the cornmeal, salsa, cheese,cilantro, garlic, salt, oregano and black pepper. Mix thoroughly.
- Divide the mixture and shape into patties.
- Heat some oil in a skillet and cook the patties until crispy on both sides and cooked all the way through. About 10 minutes on each side.
- Heat some butter in a skillet and add the eggs. Cover and cook until the whites are just done and the yolks are still runny, 3 to 5 minutes.
- Plate the rice on the bottom, place a hamburger patty on top, cover liberally with the molé and top with the sunny side up egg. Garnish with green onion pieces.
