Description
Mexican Rice is the perfect side dish with any Mexican main dish. There are a lot of variations possible with this dish and this recipe is a great starting point.

- 1 cup Long Grain Rice
- 3 Tbls Oil
- 4 Cloves Garlic, peeled and minced
- 1/2 tsp Salt
- 3 Tbls Chopped Cilantro
- 1/2 tsp Cumin
- 1/2 cup Tomato Sauce
- 14 oz Chicken Broth
Instructions
- Heat the oil in a saucepan over medium heat.
- Add the rice and stir to coat evenly. Sauté the rice for 5 minutes, stirring frequently.
- Add the garlic, salt and cumin. Stir and cook for 5 minutes more, stirring frequently so it cooks evenly.
- Add the chicken broth and tomato sauce. Stir well, bring to a boil, reduce heat, cover and let simmer for 15-25 minutes until all the liquid is absorbed. Then remove from heat for about 10 minutes covered.
- Add the cilantro and stir it in.
- Serve with main dish or sauce of your choice.
Notes
You can add things along with the cilantro such as roasted chiles, Roasted Corn, sauteed onions, pineapple pieces, etc.
