Description

This sauce uses fresh, green New Mexico or Anaheim chiles and can be made mild or spicy depending on your preference.


Ingredients

Units Scale
  • 5 Anaheim Chiles, peeled, stems and skins removed and diced into 1/2 inch pieces
  • 1/2 cup Onion, diced
  • 5 Garlic Cloves, chopped
  • 1/4 cup Olive Oil
  • 2 tsp Flour – use gluten free flour for a gluten free sauce
  • 1 cup Chicken Stock – use vegetable broth for a vegetarian sauce
  • 1/2 tsp Salt

Instructions

  1. Heat the oil in a pan over medium heat.
  2. Add the onion and garlic. Saute for 5 minutes until the onion is translucent.
  3. Sprinkle the flour over the onion and stir well, cooking for about one minute.
  4. Add the broth, whisking constantly to avoid lumps.
  5. Bring to a boil and add the chiles and salt.
  6. Reduce heat and simmer for 30 minutes, stirring occasionally.

Notes

Delicious over an omelette, chicken, shrimp or even as a gravy.
