i subbed the large yellow onion for a small yellow onion, a small sweet onion, and a shallot. Can only describe the taste difference as slightly more ‘smokey’ – i prefer it for spicy dishes such as jambalaya or spicy mushroom soup (the two dishes ive used the alternate stock for).
